Stir Fry Prawns with Garlic Chives

Today we are making Stir fry prawns with garlic chives. I use frozen peeled prawns and garlic chives that I grow in my garden. The garlic chives, or Chinese chives is easy to grow and I have been growing it for the past year. It will die off during winter and will grow again in spring.

Here is the simple and delicious recipe. We only need prawns and garlic chives! Of course, with some seasoning. I harvested the chives simply by cutting it. It needs a good wash. Remove the brown leaves and the bits that stick to the stem. Use plenty of water. It is easier to use a basin of water and shake the chives stems to remove any dirt that stay between the leaves.

Ingredients

  • 200 -300 g Garlic chives cut to 5 -6 cm lengths about 1 inch
  • 2 Fat cloves garlic
  • 1 Red bird’s eye chili or any red chili chopped
  • 1 tsp Chopped ginger
  • 1/2 Carrot - shredded
  • 112 tsp Seasoning
  • 180 - 200 g Raw shelled prawns
  • 1 tbsp Cooking oil or oil spray
  • Salt and Pepper

Instructions

  • Heat a frying pan with the oil.
  • Add in the garlic and toss until lightly coloured, then add in the ginger.
  • Fry a minute or so and add in the shredded carrots as it is harder than the chives.
  • Stir for a minute. Add in the chili and the prawns.
  • Toss until the prawns changes colour.
  • Add in the chive stems and toss. After about 1 minute, add in the rest of the chives.
  • Toss and add in a swirl of soy sauce and seasoning, a swirl of sesame oil and toss.
  • Toss and I added some salt. Toss until the chives is just wilted.
  • Plate up and season with some white pepper powder.
  • It is best served with rice.
  • Enjoy!
