Pork with Preserved Mustard Greens is a typical Hakka ( one of the many dialects of China) dish. It is hearty, and made with a cheaper cut of meat, belly,  and cooked with preserved mustard green. It is more of a hometown, country type of dish.

The preserved mustard greens is salty. This dish is not my family dish but is something I have learned to cook. aIt is not easily available in Leicestershire, but we came across it Coventry many years ago. Since I cannot be always going to Coventry just to have this, I decided to learn to make this and now it is now one of my family’s favourites.

The meat I am going to use is pork shoulder so that there is less fat. Traditionally, belly will give the dish the silken texture when cooked for many hours. But now we need to be more health conscious. so shoulder it will be.

The dominant taste of the dish is salty with some sweetness to temper it. I bet you have not experience this taste before. It is best served with plain rice (what else?).

Pork shoulder fried and sliced and slow-cooked for 3-4 hours with preserved mustard greens

(mustard, gluten, molluscs, soy, sesame, cooking wine)

Seasonal vegetables

Depends on what I can get on the day, usually a green vegetable
