Hong Bak : Friday Night Take-away 23rd October 2020 –  4.30 – 5.15 pm Collection

Hong Bak is a traditional Nyonya dish from the north, i.e. Penang. My late mother used to cook this dish. It is a comfort food. This is a unique dish as it has a fusion of Chinese and Malay/Indian flavours. This is traditionally made with trotter or belly pork. I will use shoulder instead, to avoid the fat. This stew has spices and a special ginger which I am sure many of you have not  come across before. It is called ‘cukor, or ‘kencor’. We know it by the Malay name as we are Nyonyas. I think the Cantonese or Chinese name is ‘sar keong or ‘sand ginger’. If you have been to South East Asia, you probably would have tasted it and were unaware of it as the food there is complex because of the combination of many spices and herbs.

I used to grow this herb together with some common ones like lemon grass, basil, bird eyes chillies and pandanus, when I was in Malaysia. I grew them in pots . Here is some info on cekur.

The Chinese element in this dish is the preserved soy beans and soy sauce. This dish is delicious and has a spicy base with a salty and sweet tang. Oh, and it comes with potatoes as well, stewed together with the meat which gives the potatoes a lovely umami taste.

Of course, the meal comes with rice, stir fried vegetables, and a dessert. This time the cake is Pandan Chiffon Cake. This is a much loved cake in Malaysia and Singapore. This cake is very temperamental and sometimes it just fails. But I am getting better at it now.

How to Enjoy

Use a fork and spoon with the meal.  Drizzle the sauce onto the rice, add some meat.
You will get the full flavour when you eat the rice and the vegetables together.
