Vegan Lentil Moussaka

4.30 – 5.15 pm collection

Location: LE9 Barwell

Having  2 regular meals, i.e., omni meals, now is the time to have something different.  This Friday Night Take Away meal is vegan.  Yes, you hear me right. No meat, just simply plant-based.  I have several vegan recipes.  I do cook a lot with tofu, bearing in mind that I am Chinese.  This recipe is not tofu based.  It is made with French Lentil. French lentils are  tiny green lentils and it is cooked whole, thereby giving it a slightly more bite than husked lentils.   I was initially quite hesitant to try this recipe.  This is because my family is quite fussy when it comes to meals and some times, when the food is not up to their standard, it won’t be eaten!

Since trying the recipe, I have made this not less then 5 times in the last 2 months, which is a lot of times!  I am very pleased as I am  intent on eating less meat.  I just do my little bit, to try to be more environmentally conscious.  Just as well, the family likes it and that stops them making fun of me when I try to eat vegan.

About this Vegan Lentil Moussaka

Moussaka is a common dish in Greece and the surrounding areas. It is usually made with ground meat and  sauce, with eggs, aubergine, bechamel sauce and vegetables.  These are layered and then baked. Moussaka can be served hot or cold,   and  cut into pieces before serving.

This vegan version does not contain meat, eggs, nor milk or butter. The top layer is  mash potato, so imagine it like a cottage pie.  In addition to saving time and energy by ordering this meal, you are actually making a small difference to the environment by consuming less meat, or, eating lower on the food chain.

The term “eating low on the food chain” refers to adopting a lifestyle and diet in which humans, whom are at the top of the food chain, eat foods that are at the bottom of the chain. These foods include plants, nuts, fruits, vegetables and grains.

I am not trying to convert you to veganism. I just want to point out that eating a plant-based diet, or meal can be tasty, too (made by me, obviously! Ahem).

If you have not tried any vegan dish before, this will be a good induction.

So to summarise: This meal will:

  1. save you time as you do not have to cook
  2. spend more time with your loved ones
  3. chill out and bond with them
  4. have time to plan and finalise your weekend programme
  5. eat lower in the food chain and thereby being kinder to the environment

That’s not bad. Quite a lot of positives.

topped with mash potato, pine nuts

 

Carrot Cake with  A Kick

flour (gluten), carrot, ginger, walnuts, spices

How to enjoy

You can have the salad as a first course,
or eat it with the moussaka.
The moussaka is firm and
you might want to enjoy it with a glass of wine
Slowly savour the carrot cake and the icing.
And have a cuppa to complete the taste sensation.

When you get near to here, give me a ring and park in front of the house or near the house and stay in your car, or ring the door bell (since the lock down has eased a bit) I will come out with the prepacked meals put it in the back seat or the boot.

Hainanese Chicken Rice Dinner

This was our first event and the Host made us most welcome (we were a bit early at their house) and the other 4 guests (that we did not know at all) were a good bunch as we had Great food and good conversation at the table. There was plenty of food and the Soup was Superb (best ever) and the Desert idea was novel and tasty.

Lorbak Dinner

This was our first supper with WeFiFo and Loretta made us very welcome. We were a group of three friends. Loretta cooked a delicious three course Malaysian meal and taught us the correct way to use chopsticks for the noodles. The main course was Lorbak; a pork dish and family favourite that Loretta had learned to cook as a child with her mother. Loretta joined us at the table and told us many stories about food and life in Malaysia. She is a witty host and a first class cook. In summary- a super evening, well worth the money, making new friends over superb food.

Penang Hainanese Chicken Rice Dinner

Loretta was so very welcoming and the perfect host from the minute we walked through the door we were made to feel at home and with friends. The Penang Hainanese Chicken Rice was to die for, I could have easily eaten my own body weight of it, it came with two dips and both of them were utterly delish – so much so that Loretta had to refill up the bowls twice! Loretta served a clear soup that was delicate, full of favour and like nothing I have ever tasted before. One of the vegetable side dishes was marinated lettuce – seriously this was a triumph – who knew that this humble vegetable could be expertly cooked in such a way. Dessert was a sublime chocolate and pistachio brownie, gooey and warm, served with fresh raspberries and ice cream. Please don’t miss the opportunity to let Loretta wow you with her skill, talent and stories of life growing up in Malaysia, a very enjoyable evening.
